WHAT IS 'CREMA' ON YOUR COFFEE?

If you own an espresso machine, you’re used to seeing the creamy, golden foam on top of your espresso. Did you know it’s called crema? in Italy they call it Caffè Crema. So, what is the ‘crema’ on your coffee? Is all coffee supposed to have crema? Read on and find out more about this velvety golden layer.

What makes the crema on your coffee?

The pale golden micro-froth that forms on the surface of your coffee is created by your coffee machine’s brewing method. As part of the brewing process, micro air bubbles are produces and they create a silky smooth, thin layer of froth on the surface of your coffee known as crema. What’s the story behind Caffè Crema?

If you translate it literally from Italian Caffè Crema means ‘Cream Coffee’, but they’re not talking about the cream you might stir into your coffee. Back in the 1940s and 50s, ‘Caffè Crema’ was how they described the drink we now call ‘espresso’. In fact, people still enjoy a drink called ‘Caffè Crema’ in parts of Germany, Switzerland and Northern Italy. But, they’re referring to a long espresso, brewed with more water than a standard espresso. This is the kind of coffee you’ll be making when you use Jacobs Caffè Crema pods for TASSIMO, a delicious black coffee featuring a silky golden crema layer on top.

Should all coffee have a layer of crema?

Many delicious types of coffee aren’t meant to have crema. Crema is a result of the brewing method; so, filter coffee or caffè Americano have little or none. Drip or filter coffee involves allowing hot water to pass through a paper filter filled with a certain amount of ground coffee. A barista prepares an Americano by adding hot water to a normal espresso to make a long black coffee with no crema.
